Chicken Parmesan Meatballs

Happy Monday! We had a crazy busy weekend but it was wonderful. We officially launched our son Leo at Notre Dame. Even though he has been on campus all summer for football, this weekend was freshmen orientation for the class of 2026. Notre Dame does a lot of things well, but few things top freshmen orientation. I wrote down a few quotes that really got me.

  • “Notre Dame is more than a university, it’s a way of life.”

  • “We won’t educate the mind at the expense of the heart.”

  • “Happiness is fleeting, joy is abiding.”

As you can tell, I’m totally drinking the Kool-Aid that Notre Dame is serving up. We are beyond lucky that our kids have found their place there.

But enough of that, on to this week. As we’re having new carpet installed upstairs, I’m downstairs making plans for the week. Here’s what dinners will look like this week in the Scheidler house.

Monday: One-Pot Italian Sausage & Orzo

Tuesday: Easy Mississippi Pork Tenderloin Tacos

Wednesday: Chicken Parmesan Meatballs & Arugula

Thursday: Chili and Corn Muffins

Friday: Pizza before a little high school football. Our team kicks off their season this weekend!
