Easter Side Dishes

Happy Easter! All of my kids are home and the sun is shining! Does an Easter Sunday get any better?

For this Easter weekend, I’ve kept things super simple. We’ll all go to mass this morning and then instead of me making my typical big brunch–we’re going to Egg Harbor. I’ve decided I need to pace myself with all of the big events our family has coming up over the next month, so letting go of things like big homemade brunches is something I’m happy to do. Then, we’ll close out today with my parents joining us for dinner and I couldn’t be happier.

It has been such a fun week full of new things and I wanted to share some with you.

Easter Rainbow Salad: I found this very pretty salad that I’m going to make for dinner night. It’s so pretty and looks like flavors that will go deliciously with the smoked pork roast I’m serving.

Roasted Rainbow Carrots: Speaking of Easter side dishes, I thought these carrots would taste good, too.

Chisel & Sculpt Class: Yesterday, I took Forever Om’s new Chisel & Sculpt class and it was great–an awesome addition to their regular offerings. It’s Forever Om’s traditional yoga (but warm, not hot) with light weights added in, combining the benefits of yoga with the benefits of strength training. Forever Om is offering this class several times throughout the week. Bomb Shelter: My friend Molly from Lake Forest Book Store always hooks me up with the next best book I should be reading. She couldn’t say enough about Bomb Shelter, a collection of short stories that serves as a memoir, from author Mary Laura Philpott. I’m starting this one tonight.

Moxi Laser Treatment: As many of you know, I’ve been working with Lake Forest’s Erase Medispa, trying out some of their newer treatments and sharing my experience. On Friday, I had the Moxi Laser treatment on my face and neck with Kara. This treatment promotes new cell growth and reduces unwanted pigment. You can have Moxi in the summer months, where BBL–another laser treatment I’ve tried– is discouraged if you have any type of tan or if you’re planning to be in the sun. I’ve been nervous to try Moxi because there is a little downtime with it–about 24 hours of being very red and then five days of pretty dry skin. I’m 48 hours out from having it done and the redness is almost completely gone. My skin is pretty dry, though. I don’t think I’ll be able to put any makeup on for a couple of days. Kara gave me a repair cream from Skinceuticals that really keeps my skin from feeling tight. I’m already noticing some of the deeper brown pigment coming to the surface–it almost looks like freckles. Those will flake off over the coming week. I’ll write more about this later next week when the side effects have completely gone away. But overall, the actual procedure was pretty painless and the results are promising!

Raising Money for Ukraine: Last week, I was waiting to interview a couple at Gorton Community Center when I ran into Areta Verschoor, a yoga teacher from Lake Forest who has been raising money for those suffering because of the war in Ukraine. Areta’s parents are from Ukraine and she still has a number of relatives who live there. She is working with Libertyville’s Black Cat Yoga to host an event called Hope + Hops on Sunday, May 1, a donation-only, 60-minute yoga practice at Mickey Finn’s. Afterwards she invites you to stay for brunch, a bevvie, and community. 100% of the proceeds are going directly to medical aid in Ukraine. Click here to reserve your spot at this event.

Suite Escape Lunch Series:The founders of Lake Forest’s Suite Escape, a membership-based, collaborative workspace, are hosting a series of lunches featuring some of the North Shore’s most dynamic women. My friend and former Forest & Bluff editor is speaking this coming Friday, April 22, about all things culinary and entertaining. No More Skinny Jeans: It may have taken me more than a year to come around to this idea, but I’ve decided that I am ready to hang up my skinny jeans.
