
Hello friends. It has been a while since I posted a menu lineup on a Monday, but here we are. I’ve been starving for a routine any way I can get it, so I’m starting with a menu for this week. Let’s do this!
Monday: Beef stew with egg noodles
Tuesday: Ina Garten’s pork tenderloin with pesto noodles
Wednesday: Creamy tortellini soup
Thursday: Sheet-pan pancakes
Friday: Pizza
Yesterday, I woke up and declared that I was making a “Sunday Roast.” I had no idea what I was saying, but I heard my daughter Grace talk about them over Christmas and they sounded so lovely. Living in England, her boyfriend’s family treats her to weekend roasts so I thought I would give it a try for my very American family. It was delicious. Here is the recipe I used. I just roasted my potatoes the way I normally do…there were too many steps in this recipe. But otherwise, the roast and Yorkshire pudding were fantastic as outlined here.
