What’s for Dinner this Week: 04.07.2025

Hello friends! I hope you all had the nicest weekend. I feel like every day that the sun is shining and the temps get above 30 that it is going to be a great day.

My husband is traveling most of this week, so Jimmy and I will be on our own. It’s fun for me to just cook things he likes, so this week’s menu will look a little more–shall we say–basic.

Monday: Baked parmesan chicken, roasted potatoes with pesto, green beans

Tuesday: Jimmy is volunteering with his track team at the Libertyville Culver’s–no need to cook!

Wednesday: Liz Adams’ perfect spring pasta recipe (have been using the Barilla protein pasta lately and Jimmy is a fan).

Thursday: Make-your-own pizza (we love the Trader Joe’s pizza dough–all of their classic toppings are right near the dough)

Friday: St. Mary’s Fish Fry if we’re not traveling to Notre Dame early for the spring game

While I’m making fun things for Jimmy, I meal prepped the pieces for the viral hot honey protein bowl that has been everywhere. Have you tried it?
