
We loved our girl-dinner meal plan from last week and are looking to do something similar again–lots of lighter meals with as many vegetables as Jimmy can handle. Here’s what this week’s lineup looks like.
Monday: Sheet-pan roasted veggies with Trader Joe’s chicken meatballs (we just roast the veggies we have on hand–Brussels sprouts, cherry tomatoes, mushrooms, and red onion) and cook up the Trader Joe’s meatballs for our protein, serve over brown rice and topped with arugula
Tuesday: Summer caprese pasta
Wednesday: Abby Thome’s simple Sunday sauce and meatballs
Thursday: Lemon-feta chicken
Friday: We actually have plans this Friday night! No cooking or pizza!
