Hello friends! Happy new week! Here I am on a Tuesday getting my meal plan posted but I realized last week when I was winging dinner day to day, that is not a way to live! So here is everything I’m planning to make this week.
Monday: Sheet-pan roasted veggies with Trader Joe’s chicken meatballs (we just roasted the veggies we had on hand–Brussels sprouts, cherry tomatoes, mushrooms, and red onion) and cooked up the Trader Joe’s meatballs for our protein, served over brown rice and topped with arugula
Tuesday: Summer caprese pasta
Wednesday: Spaghetti squash and meatballs
Thursday: Fall stew (Jimmy’s request even though it’s going to be 80 degrees today!)
Friday: Silo pizza
