Happy Tuesday! I hope you all had a nice holiday weekend. We snuck up to Lake Geneva on Sunday, rented a boat, and just had the best day. Since we have a revolving door on our house this summer with the kids coming and going, we need to take advantage of when they are actually here. Leo heads back to ND on Sunday (already!!) to start summer football, so I’m thrilled that he got some time tubing on Lake Geneva.
I am slowly working some summer items back into our dinner rotation and half of my crew is clamoring for salmon. If you have a split house like I do where some love salmon and some hate it, I just make chicken for those who don’t like it. I can usually use the same marinade for both.
I’m cooking a little more this week since my father-in-law is coming to town to be here for Annie’s graduation. I’m also sharing a recipe for what looks like the most delicious peanut butter ice cream cake that I’m making this weekend for my brother who has a birthday. So many fun things to celebrate!
Monday: Beef ribs on the smoker, pesto noodles, and sauteed green beans
Tuesday: Honey garlic glazed salmon and chickpea chopped salad
Wednesday: Baked parmesan chicken with spring gnocchi
Thursday: Chicken piccata meatballs with whole wheat pasta
Friday: Smoked pork belly, parmesan roasted potatoes, and roasted Brussell sprouts
Saturday: Taco ‘Bout a Graduation Party with tacos from La Plancha Loca in Highwood and then I’ll fill in with some cilantro lime rice, green beans, watermelon and chips and guac. And for dessert, Cookies by Emersen and this incredible looking peanut butter ice cream cake.
