Honey Mustard Pork Chops & This Week’s Dinners

Hello friends and happy Tuesday! I was playing so much catch-up yesterday after a busy and fun-filled Easter weekend that I never sat down to type up our meal plan for the week. In fact, we had Easter brunch leftovers for dinner last night and we were all pretty happy about that.

This week’s dinner menu is a little nutty because Annie and I are heading down to Clemson tomorrow for a last-minute college visit. She has it narrowed down to two colleges, so we’re visiting one this week and one next. Because we’ll be gone, my husband and Jimmy will have a guy’s night on Wednesday. Then on Friday, we have Jimmy’s birthday and he’s going to make a game-time decision as to what we’ll be having for his birthday dinner. So, those are all of my excuses for why this week’s meal plan looks a little sparse. But hopefully there is still a recipe or two that might lighten your load a little this week.

Monday: Easter leftovers (here’s a link to everything I made for Easter)

Tuesday: Honey-mustard pork chops with green beans (I only have a small air fryer so I will be baking these pork chops instead)

Wednesday: Guys’ night (whatever Jimmy and Ed decide)

Thursday: Parmesan chicken with this veggie-penne bake

Friday: Jimmy’s choice (it’s his 15th birthday!)
