I’m laughing at myself a bit that I’m posting a recipe today because I am NO cook. However, I do need to feed a family of seven every night so I do know my way around the kitchen…a little.Mondays are often the hardest day of the week for me but I discovered it’s a little easier if I know what we’re having for dinner before the kids leave for school. A fan favorite in my house are my sister Maggie’s crockpot tacos.They are super easy. For my crew, here’s the recipe:
- 3-4 frozen chicken breasts (adjust the amount of chicken to fit your family)
- 1 24 oz. jar of salsa (a smaller jar will be better if you’re using less chicken)
- 1 packet of taco seasoning
- 1 4 oz. can of diced chilis
That’s it! I put this all in my crockpot and turn it on low heat for 6-8 hours. Or if you start it a little later today, you can cook it on high for 3-4 hours. I’m still old school with my crockpot…an Insta-pot could turn this around in a blink. Before serving, I shred the chicken.I then let the kids serve up the tacos themselves on corn or flour tortillas (along with guacamole, shredded Mexican cheese, and sour cream toppings) with a side of Cilantro Lime rice (Rice-a-Roni) and some sautéed broccoli. And that is what we will call dinner tonight!xo
