Happy Sunday, friends! I don’t know about you, but school-year Sundays are all about me getting caught up for the week ahead. Laundry, meal planning, grocery shopping…you name it! It’s far from relaxing but it gives me so much peace of mind going into Monday.
The biggest game changer for me has been to plan our dinners for the week and grocery shop for everything I’ll need the weekend before. Not only does it eliminate the 5 p.m. panic about “what’s for dinner,” but I actually think it saves money in the long run by cutting down on the number of trips I make to the grocery store. It also totally throws my kids for a loop when they ask me first thing in the morning what we’re having for dinner and I know!
Before I leave for my yoga class on Saturday mornings, I sit down and map out our dinners from Sunday through Friday. I have a few regular dinners in my rotation, but if I have time, I spend a few minutes googling dinners that are a little bit healthier for my crew. During the winter, I rely heavily on comfort foods in the crockpot. Between Pinterest and amazing bloggers like Never Without Navy and A Life From Scratch, I can keep our weekly meals from becoming boring.
I thought it might be helpful to show you my plan for the coming week. Just keep in mind, I’m feeding three boys who never seem to get full so my dinners tend to be a little more carb heavy than if I was just cooking for myself. Since I to try to eat pretty clean most week nights, I opt for a large salad and a small portion of whatever I’ve made.
Here’s what’s happening in the Scheidler Kitchen this week:
Sunday: Homemade sausage lasagna, roasted zucchini, mixed greensalad, garlic bread
Monday: Slow cooker creamy chicken wild rice soup(recipe will be posted Monday), mixed green salad, cubed canteloup, crustybread with butter
Tuesday: Slow cooker turkey chili with Mexicancheese and guacamole, mixed green salad, corn muffins
Wednesday: Pork tenderloin over white rice, roastedbrussel sprouts, mixed green salad
Thursday: Slow cooker cheeseburger soup, mixedgreen salad, cubed watermelon
Friday: Mom’s night off! (the hubs brings home pizza)
Saturday: Kids’ choice (this week it’s my 14-year-old’s birthday and we’re heading to Tsukasa)
