Hello friends. Yesterday felt like a Monday for sure. Nothing bad, just one of those days where I felt like I was fielding questions from four million different directions—my brain had to work really hard! The worst part is that I’ve had my dinner lineup ready to share with you since Sunday night and here it is, 9 a.m., and I’m only sitting down to share it now. Oh well. Better late than never, right?
Here is everything I’m making for dinner this week.
Monday: Salt & Lavender’s One-Pot Tuscan Orzo with Chicken (This was really good, but the proportions of the recipe seemed a little off. I had to double the recipe to make enough for four. I also added some shredded rotisserie chicken to make it a complete meal.)
Tuesday: Helen-Mary’s Chili and corn muffins
Thursday: Spaghetti Squash & Meatballs
Friday: Game Night Pizza
