Our Favorite Dinners

Hello friends and happy Monday! I’m taking a little bit of a hiatus from my menu planning for the next week or so because I’m leaving tomorrow to take my daughter Grace to Madrid. Next month, she begins her job as a teaching assistant there. This is some unfinished college business from when she wasn’t able to study abroad because of Covid. And as much as I will miss her, I’m so happy that she’s doing this! I can’t even begin to imagine the stories she will be able to tell when she comes home.

Since I’m taking away some time from the kitchen, I thought this might be a good time to share some of our recent family favorites. And remember, they become a favorite when they taste delicious, are simple to make, and turn into great leftovers later in the week.
