Good morning and happy Monday! I’m almost afraid to open my planner today because of all the things going on this week. Anyone else feeling that way? For this reason, my mantra for the foreseeable future is to just keep things simple–weekly meal planning included. I’m so grateful for the recipe suggestions you all sent me last week. You’ll see that I worked a few of them into this week’s lineup. Yum!
Monday: Baked Parmesan Chicken and Onion Rice
Wednesday: Sheet-Pan Baked Feta with Broccolini, Tomatoes, and Lemon (adding chicken sausage and orzo to round out this dinner)
Thursday: Jimmy’s Golden Birthday Dinner TBD (it probably will be something super gourmet like Culver’s!)
Friday: Broiled Salmon with Spring Peas
