Okay, you guys. I have buckled down and made a real meal plan for dinners. I’m so excited to be back helping out with my beloved Camp Hope this week, but that does add a layer of busy-ness to the week that forces me to be organized. So let’s go! Here’s what I’m cooking up this week.
Monday: Lightened Up Spaghetti with Smashed Cherry Tomatoes
Tuesday :Summer Mexican Chicken Bowls
Wednesday: Lemon Butter Chicken Piccata
Thursday: Spring Carbonara (but we’ll call it summer carbonara!)
Friday: Pizza
Saturday night: Sticking to my plan of trying out as many new dinner places as I can and we’re heading to 501 Local in Winnetka. Maybe I’ll see you there ?
