Energy Bites

My kids are all pretty healthy eaters, so it has helped to have some little snacks at the ready when I can. This is a super easy recipe for some energy bites that I just keep in a ziplock in the refrigerator. (I usually double this recipe!)

What You Need

  • 1 cup rolled oats
  • 1 cup shredded unsweetened coconut
  • 1/2 cup mini chocolate chips
  • 1/2 cup smooth/creamy peanut butter
  • 1/3 cup honey
  • 1 teaspoon vanilla
  • 1/4 cup vanilla protein powder
  • 1 tablespoon Vital Proteins

What You Do

Mix all of the ingredients together to combine. Roll into balls and place in the freezer for one hour. Take out and store in your refrigerator. These keep for a couple of weeks.
