Overnight French Toast Casserole

This recipe is great if you need a yummy breakfast for overnight guests or are like me and needed to bring a brunch item to a family breakfast this morning. This casserole can easily be assembled a day or two before you need it and baked just before serving. It’s proven to be a crowd pleaser!

What You Need

  • 1 loaf of brioche bread (any bread will do, but brioche makes this extra special)
  • 8 large eggs
  • 2 cups milk
  • 1 ½ cups half-and-half cream
  • 2 teaspoons vanilla extract
  • ¼ teaspoon ground cinnamon
  • ¾ cup butter
  • 1 ⅓ cups brown sugar
  • 3 tablespoons light corn syrup

What You Do

  1. Butter a 9×13-inch baking dish; arrange slices of bread on the bottom.
  2. Beat eggs, milk, cream, vanilla, and cinnamon together in a large bowl. Pour over bread slices, cover, and refrigerate overnight.
  3. The next morning, preheat the oven to 350 degrees F (175 degrees C). Meanwhile, combine butter, brown sugar, and corn syrup together in a small saucepan; heat until bubbling.
  4. Pour over bread and egg mixture.
  5. Bake in preheated oven, uncovered, for 40 minutes.
  6. Serve with whip cream, berries, and syrup.
