Dinner for a Friend

Yesterday, I brought dinner for a neighbor and I thought I would share this menu with you in case you ever need to do the same. This lineup works all year round and is just a good one to have on hand in case you need to bring a dinner for a friend.

Baked Parmesan Chicken

Onion Rice

Sauteed Green Beans

This is super easy. I sautee a few handfuls of trimmed green beans in a tablespoon of olive oil. I season with garlic powder, dried oregano, salt, and pepper.

Mixed Greens Salad

Another easy one. I put a couple handfuls of arugula, diced red onion, chopped cucumber, sweet & spicy pecans from Trader Joe’s, and shaved parmesan cheese together. I then include a bottle of Garlic Expressions dressing to go on top.

Chocolate Chip Cookies

These are an oldie but a goody from my Mom–they are the best! I’ve been rolling the balls of cookie dough in sprinkles before I make them for a little extra something.
