I know I’m not alone in just willing it to be spring! For dinner this week, I’m channeling only sunny day vibes to take advantage of the vegetables that are in season. Because I had a little extra time this weekend since a spring football scrimmage was cancelled today, I did a little bit of research and am adding in a couple of recipes that are new to me.
