What’s for Dinner This Week: 07.21.2025

Hello friends! This is a short week of cooking for me and if I can be honest with you–I am so happy about that. We are taking a small little vacay with three of our kids to Charleston and I’m making a list of all of the great places that will be feeding our crew this week. I can’t wait!

But since I do have two nights to cook this week, I thought I’d go ahead and at least share those recipes with you. Here you go!

Monday: Camp Hope chicken in light of it being Week 1 of this amazing summer camp (chicken thighs, dipped in butter, rolled in bread crumbs, sprinkle with salt and lemon pepper, bake at 350 for 50 minutes until nice and brown–this is my Mom’s exact recipe); onion rice (2 cups of rice, 2 cups of chicken broth, 2 cans of French onion soup, and 1/2 stick of butter); and roasted green beans

Tuesday: Abby Thome’s simple Sunday sauce and meatballs on a Tuesday
