What’s For Dinner this Week: 8.26.2024

This morning at yoga, my girlfriend Megan said that she wrote on her calendar “Back on Track.” That’s exactly how I feel about all the things in my life, including meal planning. I can already feel the intensity of the fall schedule coming and just knowing what’s for dinner each day helps me so much. So let’s do this! Here’s everything I will be cooking up this week. These are some of Jimmy’s favorites. Since he’s the lone guy left at home, he has lots of influence on the menu!)

Monday: Chicken fried rice and broccoli (using Trader Joe’s veggie fried rice, shredded rotisserie chicken, and the Trader Joe’s Soyaki sauce).

Tuesday: Chicken pot pie

Wednesday: Baked parmesan chicken, onion rice, and roasted green beans

Thursday: Sloppy joes and roasted potatoes (cube 10 yukon potatoes and coat in olive oil, salt, and pepper and roast at 400 for 30 minutes)

Friday: Football and pizza!
