
This hot weather is making me just want to make hearty salads at dinner time so that is exactly what I’m going to do this week.
Monday: Crispy Chicken Caesar Salad (may sub the Trader Joe’s Vegan Caesar Salad Dressing in place of the one in this recipe) and will make some roasted fingerling potatoes on the side for Ed and Jimmy.
Tuesday: Protein Salad + barbecue chicken
Wednesday: Mediterranean Chickpea Salad with a roasted balsalmic pork tenderloin
Thursday: Peach Buratta Salad (buratta, arugula, heirloom tomatoes, peaches, basil, honey, balsamic vinegar, salt, and pepper) with baked parmesan chicken and pesto noodles
Friday: Pizza night
The kids will all start trickling in next weekend and spend the week of the 4th of July with us! I can’t wait and to celebrate I have to make this strawberry shortcake while they’re here. It looks so festive and fresh. But if I’m being honest, this cake is probably more for me than them. They are a great excuse to bake!
